Drawing from Japanese black-ink painting and minimalist design, Nori Maki’s charcoal walls, dark floors and deep shoji ceiling invite dining guests into a space of stillness with minimal distraction. A sculptural, horseshoe-shaped sushi counter made from timber and stone sits at the heart of the Melbourne restaurant, placing the chef at centre stage.
